Nowadays, Japanese Food is recognized as “Healthy Food” in the world. There are two reasons that are good balance of nutrition and cooking method.
People can take nutrition from rice, soup and side dishes in one meal. Only rice has high sugar content, but by combining with other ingredients well, we can reduce sugar and prevent taking excess fat. In addition, fermented ingredients such as soy sauce and miso are very often used in Japanese food. The power of fermentation makes food more nutritionally superior.
Apart from fried foods such as tempura and karaage, there are many Japanese foods which are grilled food, simmered food and steamed food. We can say these foods are healthy because it doesn’t use oil. Especially, sushi can be cooked without using oil. Extracting umami ingredients from kelp and dried bonito is one of the healthiest things about Japanese food. It’s called "dashi" in Japan. Japanese food has light taste to enjoy the taste of food materials. This is also why we can say Japanese food is healthy.
